Early in the morning, the butcher navigates her sampan through the narrow, nearly impenetrable canals, where she sells fresh meat door to door. This is possible as most houses in the Mekong Delta back on to waterways. Some canals are so narrow that, during low tide, the sampan often gets stuck in the muddy banks, requiring phenomenal skill and strength to dip the oars into the mud and push it back to deeper water.
